Crunchy Kale Salad with Apple and Pecans
Our crunchy Kale Salad with Apples and Pecans is a delicious and satisfying salad that is perfect for any meal. It's absolutely packed with flavor, from the toasted panko breadcrumbs and pecans, to shaved Parmesan cheese. Dressed with a homemade lemon tahini dressing that is subtly sweet and nutty, this salad recipe will leave you feeling full and happy.
Ingredients
- 1 bunch lacinato kale stems removed, thinly sliced into ribbons
- 1 medium apple sliced into matchsticks
- 0.5 cup pecans toasted
- 0.25 cup Parmigiano Reggiano shaved
- 0.25 cup panko breadcrumbs toasted
- to taste Lemon Tahini Dressing
- tablespoon olive oil for toasting breadcrumbs
- to taste Kosher salt
- to taste black pepper
Instructions
- Choose your desired dressing (e.g., Lemon Tahini Dressing). Most dressings without mayonnaise can be made ahead and stored for up to 1 week in the fridge.
- Heat a little olive oil in a nonstick skillet over medium-high heat. Add the panko breadcrumbs and cook for 2-3 minutes, or until golden brown and toasted.
- Place the thinly sliced kale leaves, apple matchsticks, toasted pecans, shaved Parmesan cheese, and toasted breadcrumbs in a large bowl. Pour as much of the dressing on top as you like, then toss well to evenly coat.
- Taste the salad and adjust seasoning with Kosher salt and black pepper as needed.
