Crispy 'Feta' Stuffed Air Fryer Olives
These crispy air fryer olives are stuffed with a savory, homemade tofu 'feta' mixture and coated in a crunchy breading. They make for a delicious and easy vegan snack or appetizer.
Ingredients
- 40 g firm tofu
- 0.5 Tbsp refined coconut oil
- 1.5 tsp nutritional yeast flakes
- 0.5 tsp onion powder
- 1 tsp apple cider vinegar
- 0.25 tsp agave syrup
- 0.125 tsp smoked paprika powder
- 0.125 tsp salt
- 1.5 cups pitted green olives
- 4 spritzes cooking oil spray
- 3 Tbsp all-purpose flour
- 0.5 tsp garlic powder
- 0.33 cup unsweetened soy milk
- 0.5 cup bread crumbs
- 0.25 cup panko bread crumbs
- 0.25 cup raw sesame seeds
Instructions
- Add all the ‘feta’ ingredients (firm tofu, refined coconut oil, nutritional yeast flakes, onion powder, apple cider vinegar, agave syrup, smoked paprika powder, salt) to a small food processor and blend until smooth.
- Transfer the mixture to a piping bag or a ziplock bag, then snip a small corner off and pipe a bit into each pitted green olive. Preheat the air fryer to 400°F (200°C).
- Prepare three small bowls. In the first bowl, mix together the dry coating ingredients: all-purpose flour and garlic powder. In the second bowl, whisk together the wet batter ingredients: all-purpose flour and unsweetened soy milk. In the third bowl, combine the breading ingredients: bread crumbs, panko bread crumbs, and raw sesame seeds.
- Dip each stuffed olive into the dry coating, making sure it’s evenly covered. Then, dip the olive into the wet batter, letting any excess drip off. Finally, roll the olive in the breading mixture until fully coated.
- Place the olives in the air fryer basket and spritz with cooking oil.
- Air fry for 12 minutes, or until golden, shaking the basket halfway through. Alternatively, if baking in the oven, preheat to the same temperature using the fan setting and bake for 17 to 20 minutes total, or until golden.
- Serve warm as-is or with a dipping sauce of your choice. Enjoy!
