Herby Tofu Sandwich with Coriander Hummus
This delicious sandwich features an olive tapenade, herby tofu, a vibrant lemon and coriander hummus, sweet roasted red pepper, and sharp pickled onions, finished with a sprinkle of chili flakes.
Ingredients
- 50 g pitted kalamata olives
- 1 teaspoon extra-virgin olive oil
- 0.5 280g block extra firm tofu, drained
- 1 tablespoon extra-virgin olive oil
- 2 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 0.5 teaspoon salt
- 0.5 teaspoon garlic granules
- 1 teaspoon oregano
- 75 g hummus
- 15 g coriander
- 1 teaspoon lemon juice
- 1 roll or baguette, sliced and lightly toasted
- 1 handful rocket
- 2 slices roasted red pepper
- to taste Pink pickled onions
- to taste Chilli flakes
Instructions
- Add all of the marinade ingredients (for the tofu) to a shallow container and mix well to combine.
- Cut the tofu into slices about 1/2 cm thick.
- Add the tofu slices to the marinade and coat well. Leave to marinate for as long as you can.
