Charred Green Beans with Herby Lemon Salsa

Ingredients
- 1 pound green beans
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 0.5 small shallot
- 0.5 teaspoon sumac
- 1 tablespoon red wine vinegar
- 2 tablespoons preserved lemon
- 1 tablespoon lemon zest
- 1 cup cherry or grape tomatoes
- 0.25 cup fresh basil
- 0.25 cup fresh parsley
- 0.5 teaspoon red pepper flakes
- 2 tablespoons pine nuts
Instructions
- In a medium bowl, combine the shallot, sumac, red wine vinegar, 2 tablespoons extra virgin olive oil, preserved lemon (or lemon zest), cherry or grape tomatoes, fresh basil, fresh parsley, red pepper flakes, and pine nuts. Stir well to combine. Taste and adjust seasonings as needed. Set aside.
- Heat the remaining 1 tablespoon olive oil from the “For the Green Beans” section in a large wok or heavy-bottomed skillet over high heat until shimmering. Add the green beans and spread them in a single layer. Cook, undisturbed, for 1 minute to get a good char.
- Stir and cook for another 1 minute, then add the minced garlic, kosher salt, and black pepper. Stir and cook for 1 to 2 more minutes, stirring frequently, until the garlic is fragrant and the beans are tender-crisp and charred.
- Remove from heat. Transfer the green beans to a serving platter and spoon the herby lemon salsa generously over top. Serve immediately.
