Carrot Cake Oatmeal

Ingredients
- 1 carrot
- 1.25 cup plant milk
- 0.5 cup quick cooking oats
- 1 tbsp agave or maple syrup
- 1 tsp cinnamon
- 0.5 tsp vanilla extract
- 0.25 tsp ground ginger
- pinch nutmeg
- pinch salt
Instructions
- Finely grate the carrot using the finest side of a vegetable grater.
- Bring the plant milk to a boil in a pot. Stir in the quick cooking oats and grated carrot, then reduce heat to medium. Cook for 2-3 minutes, stirring often, until the mixture has thickened.
- Stir in the agave or maple syrup, cinnamon, vanilla extract, ground ginger, nutmeg, and a pinch of salt. Cover the pot with a lid, remove from heat, and let it soak for 3-5 minutes.
- Serve the oatmeal in a bowl and garnish with desired toppings.
