Apple and Cheddar Scookies
A 'scookie' is a delightful cross between a scone and a cookie, combining the sweetness of apples with the savory tang of old cheddar. This unique treat is perfect for fall apple picking adventures, offering a delicious sweet and savory flavor profile.
Ingredients
- 0.75 cup unsalted butter
- 0.75 cup granulated sugar
- 2 eggs
- 1 large apple cored and grated
- 2.5 cups all-purpose flour
- 1 cup old cheddar shredded
- 0.5 tsp baking powder
- 0.5 tsp baking soda
- Pinch salt
Instructions
- In bowl, using electric hand mixer, beat butter and sugar until fluffy.
- Add eggs one at a time and beat well after each addition.
- Stir in apples until combined.
- In another bowl, whisk together flour, cheese, baking powder, baking soda and salt.
- Stir into butter mixture until just blended.
- Drop dough by heaping tablespoonfuls on parchment paper lined baking sheets (I ran out of parchment paper and greased the pan instead).
- Bake in centre of 350°F oven for about 15 minutes or until light golden and firm.
- Let cool completely on pan.
