Greek Chicken and Potatoes with Salad and Tzatziki
A complete Greek-inspired meal featuring marinated chicken and diced potatoes, both air-fried to perfection, served alongside a fresh Greek salad and creamy homemade tzatziki. This hearty dish is perfect for a satisfying dinner.
Ingredients
- 800 g Chicken breast
- 2 cups Greek yogurt
- 5 tbsp Lemon juice
- 1 tbsp Olive oil
- 6 cloves Garlic minced
- 4 tsp Dried oregano
- 4 tsp Paprika
- 1.5 tsp Salt
- 1 tsp Black pepper
- 1200 g Potatoes diced
- few sprays Olive oil spray
- 1 tbsp Garlic powder
- 1.5 large Cucumber diced
- 2 medium Tomatoes diced
- 0.5 medium Red onion sliced
- 2 tbsp Parsley chopped
Instructions
- Add the chicken, yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper to a bowl. Mix well and marinate for at least 30 minutes. Tread the chicken onto skewers if available.
- Dice the potatoes into small cubes, then season with oregano, garlic powder, paprika, salt, pepper, and olive oil spray. Air fry at 400°F for 20 minutes, shaking halfway through, then finish with lemon juice.
- Air fry the chicken at 400°F for 12 minutes or until fully cooked and lightly charred on the outside.
- Chop the cucumber, tomatoes, red onion, and parsley, then add them to a bowl with lemon juice and a small pinch of salt. Mix well.
- Grate the cucumber for the tzatziki and squeeze out as much water as possible using paper towels or a clean kitchen towel. Add it to a bowl with Greek yogurt, garlic, lemon juice, dill, salt, and pepper, then mix until smooth.
- Divide the potatoes, chicken, salad, and tzatziki evenly into 4 bowls and serve.
