Gulpea: Afghan Tomato & Cauliflower Stew
Gulpea is a comforting Afghan tomato and cauliflower stew. This simple and flavorful dish features tender cauliflower florets simmered in a rich tomato sauce with aromatic spices like turmeric and fresh chili, making for a hearty and healthy meal.
Ingredients
- 3 Tbsp vegetable oil
- 1 large onion chopped
- 3 Tbsp tomato paste
- 0.5 tsp ground turmeric
- 1 medium head cauliflower broken into bite-size pieces
- 1 fresh red chili minced
- 1 cup water
- 0.75 tsp salt
- pinch ground black pepper
Instructions
- Heat the oil in a medium pot over high heat. Cook the onion, stirring often, until golden.
- Add the tomato paste and turmeric, and stir continuously for 30 - 60 seconds to lightly toast.
- Then add the remaining ingredients, cover, bring to a boil, and reduce to a gentle simmer, stirring every few minutes until water has been absorbed.
- The dish is ready when the cauliflower is soft. Enjoy!
